Hello Marianne and everyone This is an interesting technique that Ulrike outlines. I first encountered multiple threads as gimp when I tried Chantilly from Lia's book. Traditional Bayeux and old Tønder also have this kind of gimp. It is handy for pairs leaving the ground or motif with nowhere to go but join the gimp, until they are needed again in the design. You are right, it is also a good way to deal with stops and starts of the gimp, so that the lace looks nicer.
