I really like Bev's suggestion: "I place unframed laces flat on a table
covered by a table-cloth size of clear vinyl that hangs well over the edge.
People can poke at them all they like." If I have occasion to demo again, I
think that's exactly what I'll do. For the lace on the pillow, though, I
have tried everything from zip loc bags over the trolley lace roll to large
cards pinned over to keep fingers off. I used to keep a demo pillow of
bookmarks in natural color linen, and then I did not care so much what they
touched. Except for the pesky kiddos who grab and run. I have had bobbins
stolen too: it's heart breaking besides being thread breaking! But with my
hands so arthritic, I just can't endure the questions - did making lace do
that to your hands??? - so I'm now a poor ambassador for the craft. 
I do remember the first time I saw a Danish pillow filled with antique
bobbins, though, and I was hooked at hello.
