Ok, I knew I missed it...

Well, so there is a place to define the path to the key file in the DDNS tab 
of the global DHCP settings.

But for my case, there is still a problem: We don't use a key at all! 
It seems, that an empty key/empty keyfile is not accepted by the DHCPD daemon, 
so there should be a option in the DDNS tab of any subnet to specify
- if a key should be used at all
- what the key is called (currently fixed to DHCP_UPDATER).

Plus, in the DDNS tab of the global DHCP setting, the field with the path to 
the DHCP key file should be OPTIONAL as long as no key is required by any 
subnet!
