I assumed rights were the culprit, but I am using the rootdn's userid (manager).

And the ldap.log shows only this when I attempt a record deletion;

this looks like a rights problem. Are you sure that your LAM admin user has 
enough rights?

If yes then you should turn on logging to get more details. In 
/etc/ldap/slapd.conf turn logging on with the line "loglevel 256".
OpenLDAP uses /var/log/syslog for log output.
