I think it's more likely that this is a case of improperly declaring
the encoding, or failing to
declare the encoding at all.
People have used docbook to include the copyright symbol for hundreds
of years now.
But I agree (glorp not withstanding) that (C) is just as good.

Wouldn't this be a question for the deployer?
The simplest solution would be to get rid of the © symbol and use
(C) instead. I'm sure that some step in the process is losing the
encoding of the file and treating it as ASCII instead of Unicode,
hence the glorp.
