So you basically transfer money into your Dettes:Taxe so you always know how 
much tax you owe, but you don't have a ledger account containing the value you 
actually have, like Actifs - Dettes, is this right? You always have to 
calculate this value if you need to know?

Seems like this could work for me too, maybe there is a way to calculate
that difference automatically.

The other downside is that you always need to introduce 2 transactions,
one when you invoice and another one when you get paid, but I don't see
a way around that...
