I have jailbroken my ipod4 and the missus iphone4. The latter she wanted to use "properly" so I reflashed the firmware using itunes with no problem.
My ipod, still jailbroken, is recognised in itunes, although I use other software to copy music to it. I assume you have tried the holding the home button and the power button to re-spring it?
