It's entirely your choice.

Personally, I use AKAs very little, only for when someone is actually
known by totally different names at different times in their lives (or
at the same time - eg a stage name - but this has not yet arisen for
me). For example, my daughter is known by her father's surname on all
documents until she was about 10 years old, at which time she adopted
(without any legal process) the surname of her step-father.

Where there are variations in spelling I record whatever spelling
appears in the relevant Source, but it is usually not too difficult to
decide which is the "correct" (there was no notion of "correct spelling"
at one time) version to be used as the person's main name in the
database.  For example, my maternal grandfather was named Bloor and that
is the spelling I use for all members of that family, but other
spellings occasionally crop up in Censuses, etc.  One member of the
family's birth was registered in the name of Blower, so this is recorded
in the Source Citation for his birth, but I use Bloor for his surname as
that is how is name was usually spelled.
