It may not be the right way, BUT, as a work around I give the "surnames" I 
don't yet know, "Zebra" or Zelma or something with a "Z" as somewhat of a place 
holder.  That way when I see a "Z" name, I know it means I don't have it yet!  
This is just my work-around.  I hope this helps!

When tidying up my files in preparation for Legacy 7.5 and the FamilySearch
interface. I came upon the following problem.
I had adopted the practice of using ? as the Surname of sisters when I did
not know their Maiden Names.
Consequently when I deleted this surname I lost the relationship of sisters.
Can someone please advise me the correct whey of overcoming this problem.
