I don't often edit a person's information from the name list (View, Name
List), but thought I would try it to see what results I got.

I entered AKAs for three people and added a surname to someone whose surname
was blank. Then I went back to the family view, checked out the four people
I had changed information for, and all is well -- no quirky stuff.

Have you tried file maintenance, closing Legacy, re-booting your computer?
That sometimes helps clear up odd behavior.
