Unless you are citing a Source of some information there won't be a
citation!

If the e-mail is giving you information which you want to record against
a particular person or persons then you could enter that information as
a Note (General or Research) if not in a more specific field and cite
the e-mail as the Source of the information.

If you simply wish to record that you contacted this person and note his
reply, To-Do is probably the most appropriate place.
