I use the date of enumeration for the reasons stated by others (records date of residence, individuals or families listed twice). I have even found one family listed in the 1880 census on June 2nd and the page was marked with a stamp, "First enumeration rejected." Later I found the same family on another page dated November 9th with a different surname spelling, at a different address, and with different family members. I think the actual date of the enumeration is essential. The official date is easily available and could be entered in the Master Source "Comments" block.
