Jackie, this may be an obsolete suggestion from an old-timer, but I'm gonna make it anyway. After you make your To-Do list -- consider making a separate printout for every source you are going to check. The catalog description, with your notes (handwritten or printed) on what you will be looking for, and date range. You'll probably have room to write many of your results right on that paper -- and add them to your computer later, at home.
Books, not available online, are my first priority. Microfilms and microfiche second, especially the ones that may be restricted (catalog description tells you that.) I always take a purple folder (any color but easily spotted) for papers I'm done with for now -- finish at home. I understand there are researchers who want to enter everything via computer, and handle as little paper as possible -- I admire their skills. But I can't manage that. Have a great time in SLC. Do take breaks, walk through Temple Square and enjoy the flowers, take a look at the old pioneer cabin next to the library.
