It would take extra processing to find the parents of a person, the replaceable text fields generally work with data that is immediately available. Husband and wife for example only work for marriage items where both parties are stored as part of the marriage. Mother and Father would have to find the family in which the person involved in an event is a child. A person can also have multiple parents so there would be an additional problem of choosing the correct mother and father.
In short you cannot have mother and father in an event sentence using replaceable text. You could use the sentence override and manually enter the parent names you want.
