If you use the defaults as you install Legacy 8 and when you open
your own file in Legacy 8 you use the option to copy the file to the
new default folder and convert and open it there, you'll have exactly
what you want.

Your Legacy 7.5 will be still there with its database and you'll have
Legacy 8 as well with its own copy of your database.

That said, I always open a new version with the Sample file and look
around and play with that first. You'll still get the conversion
dialogue I mentioned when you choose to open one of your own files.
