You cannot customize what you see in the person's information screen. That is a data entry screen and all the fields on it are fixed. You enter the cause of death on the Medical Notes and you can have that as a custom screen in the Family View and on the Details tab of the Name List and Search results lists. The notes are available from the individual information form using the notes icon so you can access the cause of death from there.
To customize the view on the name list right click on the labels of the details tab just as you do for the custom family view.
