Robert, I enter completely unknown persons as Child1 UNKNOWN, Child2 UNKNOWN, etc. I usually enter them as Males by default - but I'm probably just a MCP.
I enter unknown wives as Alice UNKNOWN, Betty UNKNOWN, etc. I don't like entering unknown wives of say John SMITH, as Alice SMITH; it can be quite confusing in later months. If I end up with two Alice UNKNOWN's, I then use the Title Suffix field to add something like [[Dup1/2]] to the first Alice and [[Dup2/2]] to the second Alice. This helps when I run a Find Duplicates search to distinguish between different Alice UNKNOWN's. I know these methods may not be ideal for you, but they get me where I need! I believe that there is no one correct answer (within Legacy) to your dilemma. Try a few different methods as suggested by others. And then pick the one that you're most comfortable with.
