Fish Fillets W/Cucumber Yogurt Sauce1 (8 oz) plain nonfat yogurt 1 tsp lime juice 1 clove garlic, minced 1/2 small cucumber, unpeeled and chopped finely 1/2 tsp dill weed 3 Tbsp canola oil 4 flounder or sole fillets 1/4 cup flour Dash of pepper 2-2/3 cups hot cooked rice Combine yogurt, lime juice, garlic, cucumber and dill weed in small bowl. Heat oil in large skillet on medium heat. Coat fish fillets with flour. Shake off excess. Place fish in skillet. Cook 3-5 minutes per side or until fish is flakey. Season with pepper.
