Sweet Potato Biscuits

2-1/2 cups flour

1/2 cup sugar

5 tsp baking powder

1 tsp salt

1/4 tsp cream of tartar

1 tsp ground cinnamon

1/2 cup shortening

1-1/4 cups cooked mashed sweet potatoes

1/3 cup milk

 

Sift together in bowl dry ingredients.

Add shortening.  Cut in until crumbly.

Combine mashed potatoes and milk and them stir into mixture.

Knead slightly.

Roll to 1/2-inch thickness and cut with biscuit cutter.

Place on greased baking sheet and bake at 375º for 12-15 minutes.

18-20 large biscuits

Buttermilk Biscuits

3 cups flour

3/4 tsp salt

4-1/2 tsp baking powder

1 tbsp sugar

3/4 tsp baking soda

6 tbsp shortening

1 egg, slightly beaten

1-1/3 cups buttermilk

 

Sift together in bowl dry ingredients.

Add shortening.  Cut in until crumbly.

Combine egg and buttermilk and then stir into mixture.

Knead slightly. 

Roll to 1/2-inch thickness and cut with biscuit cutter.

Place on greased baking sheet and bake at 350º for 10-12 minutes.

24 large biscuits

 

**Sometimes I use this recipe and add grated cheddar (1 cup) and Italian seasoning (1 tsp) to the dry ingredients.
