I've logged in as one of my remote administrators with their admin email address and their password and yet I do see that they have access to one of the lists that are not theirs. The list that they have access to does show that the administrator of the list is me.

Why is this happening and how do I correct and prevent it?

When you log in as the superuser and look at their list of privileges, the list that they have access to is not checked?

Ahhh. Ok. An admin can have access to a list but not be the administrator.

Sorry for the trouble.
