Strange! It would be interesting to find out why there is a
difference. Technically, starting from a LFS host with coreutils-5.2.1
installed and installing coreutils-5.93 in /tools is also an update.

Not really, there are instructions for folks who are just upgrading
packages. For example,

The "From Scratch" as I understand is from source :)
