Binutils has multiple configure scripts. Those for both ld and gold
seem to look for the --with-sysroot switch.
When I last built (LFS 2018-07-26) the sysroot switches were
accepted without complaint, and the resulting system works.
So, if you have the time and motivation you could research this and
build with it, as well as with what is currently in the book, and
compare the results. Alternatively, accept that what is currently
in the book works adequately, at least until somebody finds a problem
;-) and concentrate on things which are more important to you.
