My apologies if this was already asked before but my Google-fu through
the mailing list archives didn't turn up what I was looking for.

Is there a difference and will it matter if my host system has
libgmp.so or libgmp.a but not libgmp.la on it? Same with libmpc and
libmpfr, I have the .so and .a files but not .la.

Your question indicates you don't know what a .la file is. It is a text file used by libtool used by some applications to build on multiple operating systems. The .la files are not needed in Linux, but sometimes inconsistent .la files can interfere.

Read what the book says about library-check.sh: "The files identified by this script should be all present or all absent, but not only one or two present."

Also has anyone successfully used Ubuntu 14.04 as a host system to
build their LFS 7.6 machine? Any particular hang-ups that I should
watch out for?

Yes and No.
