You mount the partition as root and it belongs to root. That's OK because you 
aren't actually going to work in the $LFS directory itself. You'll be doing 
your temporary build in $LFS/sources and installing the results in $LFS/tools. 
The ownership and permissions of those directories will be set so that you can 
work in them without using sudo.

Once you have created the tools, you will create (as root) a set of top-level 
directories in $LFS. Then you can chroot to it and install the whole final 
system as root without putting your host system in any danger.
