Just to follow up on this issue: it's not currently possible to "hide" tags
from the GitHub releases page, you can only delete the tags from the
repository.

This strikes me as odd, since obviously not all tags will necessarily
correspond to released versions, etc., but I have marked all the old
releases as "historical" and added a link to the latest current release to
hopefully avoid confusion in the future.
