This is not about endnotes settings, but about the disapperance of their content upon save to the docx format. I am not sure whether the specific setting (arabic or roman numerals) has an impact on the issue. It might be more generally realated to the export of endnotes in docx. As of my analysis of the unzipped docx file, it contains a file called endnotes.xml.
