Baffled... So I connected a physical US QWERTY Logitech bluetooth keyboard and set the macOS keyboard layout to German - Standard. It's a Windows-like keyboard so it took a minute or so to figure out where the Command key is mapped to but I was eventually able to find using the Keyboard Viewer.
