This is not an issue with LibreOffice, but just some mistake in using the
operating system. Asked about it in our QA chat:

Just opening the dmg is not installing anything, and when actually dragging the
app from the dmg to the harddrive will prompt whether to replace the
folder/existing installation or not. You could also drag to a different folder
and have multiple versions "installed".

Which one is run depends on which one you launch (and if one is running already
that'll just be activated just like on other platforms)

There is no way for the existing version to "take over" or block the
installation/overriding the installation.
