Which application is this? Writer? Calc? Impress? What kind of an action is "macOS nighttime settings"? Is it something that changes at a certain hour? If so, what if you restart LibreOffice? Please share an example document showing this. If the text is formatted with Automatic colour, it will adapt to the background colour. If a colour has been set explicitly, it will not change.
