Please tell us whether you have set your desktop Appearance Mode in macOS system settings to Automatic. The use of the Automatic desktop appearance setting is known to cause issues with LibreOffice's own display if this is set to Dark theme, because it does not update dynamically for all parts of the application without a restart of LibreOffice (which is a bug, because it should be a nicely behaved macOS app, but everyone who has ever used LibreOffice on macOS knows that it isn't, for a whole number of historical reasons).
