Leave the Tools -> Options -> Appearance "LibreOffice Themes" listbox set to
'Automatic' it will then track with os/DE as you adjust your color sense (e.g.
Dark or Light on Windows DWM)

If you use the listbox's 'Light' or 'Dark' you *must* restart LibreOffice to
fully apply.

Likewise if you check enabled the 'Use application theming' you should go ahead
and install a theme or two with the mini-extension dialog there--and restart.

If yo move back to the os/DE controlled theming, uncheck the 'Use application
theming' and restart.

While application theming is checked enabled, you can switch between the
application themes--but again for complete transitions, still best to restart
LibreOffice.

So, only with disabled application theming, and LibreOffice theming set to
'Automatic' is expected to track with os/DE color sense.  But even then a
preventative restart of LibreOffice for full refresh of the color assignments
remains my advice.

As application theming (and Dark mode support) was reimplemented (not to be
confused with MS 12 color document theming) we used to pop-up a force restart. 

Many of the nits have been resolved, so folks asked to remove the restart
pop-up as too frequent. But it is not 100%, and the only sure way still is to
do the restart. Though some changes still trigger the restart. 

It is still most reliable to just restart anyway as you control your UI and
adjust the application themes.
