Hi Joel,
The OP is referring to running LO headless, as a document converter process
instantiated from a Java app. This is a known use of LibreOffice as a "server"
process, for example unoconv on Linux can do the same thing.
The sudden death syndrome is a known (and to my knowledge, unexplained) failing
of LibreOffice when running in this mode. It has been around for as long as I
can remember, certainly since OOo days. Previous versions of OOo, and AOO could
at least handle several tens (even hundreds) of document conversions before
dying. It seems that the URP bridge has become more unstable, or perhaps it
requires more memory to be allocated beforehand.
We should also bear in mind that if any Java instantiation is involved within
LO, something which the OP doesn't explicitly mention, then the whole thing may
fall foul of the Oracle Java support bug 74877 and bug 94716.
