You are right, the default menu entries are blocked; you can only delete menus
that you added yourself (the +/- buttons right of the dropdown). But Regina's
tip in comment 2 works.
Having alternative menus where you easily switch from menu structure A to B,
ideally also with extensions, likewise the icon theme is a nice-to-have. And
probably there is an open request somewhere. But we have Notebookbars for the
different use scenarios including a variant without the main menu.
