I don't know the implementation of that status bar dialog nor what languages it finds worth to be picked up. I can only say that selecting text and clicking More... in the dialog and assigning a language from the Font tab *does* work and changes the language of the selection. Similar for Paragraph. It also works to change "Default Languages for Documents" in Tools -> Options -> Language Settings -> Languages, including "For the current document only".
