Except... there is no way to specify the *name* of a specific sheet (if you only want to extract a particular sheet). The docs at https://wiki.documentfoundation.org/ReleaseNotes/7.2#Document_Conversion say a 1-based numeric index can be specified, but that requires knowing the order of the sheets the last time the .ods was saved (the user can re-order sheets at will).
