With at least LilyPond 2.14.2 from Debian Sid/unstable umlauts like ä or  
special characters like ß are incorrectly exported to the meta data of the  
PDF file.

    $ evince umlaut.pdf
    Entity: line 10: parser error : Input is not proper UTF-8, indicate  
encoding !
    Bytes: 0xDF 0x3C 0x2F 0x72

Unfortunately I cannot test 2.16.x on my system as no packages are  
available yet for Debian Sid/unstable i386.
