Not quite sure what you are trying to achieve here. Gregorian Musik does not have clefs and keys, at least not in the same way as e.g. Bach or Mozart have. If you are after creating gregorian engravings, then I do second Victor's recommendation regarding Gregorio. I use lilypond's gregorian stuff mainly when I'm mixing gregorian and "normal" notation.
