Gregorian Musik does not have clefs and keys, at least not in the same way as e.g. Bach or Mozart have. If you are after creating gregorian engravings, then I do second Victor's recommendation regarding Gregorio. I use lilypond's gregorian stuff mainly when I'm mixing gregorian and "normal" notation.
