If you don’t want to write things like
\relative { \key b \major b cis dis e fis gis ais b }
you could enter it in another key and use the transpose function:
\transpose c' b \relative { \key c \major c' d e f g a b c }
\transpose bes b \relative { \key bes \major bes c d es f g a bes }
Accidental styles will never change pitches but only the behaviour, how
pitches are represented by accidentals.
