Dear Knute,
In writing this, I realize I am not addressing the very issue you describe, but
it does appear it isn’t necessary for you to change \acciaccatura to a
\slashedGrace to modify the slur shape. As an exercise for myself, I just did a
quick example (sorry, it’s not MWE) out of Chopin Prelude No. 12, m. 24 (I
based it on the Paderewski urtext edition). Code is at the end of my message.
As you will see, it is still possible to adjust the slur shape within
acciaccatura, but it appears the placement of the \shape command matters.
Interesting behavior I observed is that when you specify \slurUp for
\acciaccatura, it will place the arrival point of the slur to the top of the
chord/dyad, but the slur will begin at the tip of the stem, as well, so that is
a bit uglier.
Regarding whether or not acciaccatura slur should always be connected to the
top of the chord, here I am not really sure if I prefer that over manually
tweaking it like I did in the example below, especially as you can still
control the shape of the slur. I tend to associate acciaccatura to be used in
the monodic, melodic context, and this probably is why LilyPond appears behave
in the way you describe in the original message as well as my observation. In
that, the destination of the slur is associated with the direction of the slur
(i.e. if the slur is up, then it is connected to the top of the chord, and vice
versa).
