LilyPond does in fact create kneed-beams with semiquavers, if the "gap" is 
large enough.  The documentation states: "A kneed beam is drawn if the gap is

depends on the duration of the notes and the slope of the beam)."

You can control the slope of the beam manually using beam positions.  I don't 
know of an automatic way of doing this:
