I'm not sure if it would help, but you could think of a combination of
Sound Xtra to record the sound, or perhaps HearMe (if it keeps a
temporary file of the audio) and the AmpXtra from www.marmaulade.com.au
to analyze the audio to a best version of the spoken audio.
