I've created projectors with video playing 800x600 and the playback was VERY smooth. I had used Sorenson to compress the video, and I think it was actually compressed to 320x240, and I just scaled up the video - sorenson is great for this as you don't see the pixelation you normally would. Make sure your video is direct to stage as well.
