Laura, The property settings for how a projector's window is displayed are in the same location in D7 and D8 (and D8.5), the Create Projector options dialog box. Here you can set whether the projector is full-screened or not, whether it appears in a window or not and whether or not that window has a title bar. Beyond that you must use Lingo to select from the various windowType options (see the docs for more info).
The information that used to be available via Modify>Movie>Properties is now available on the Property Inspector (aka the "PI"). You can open this by either going to Window>Inspectors>Property, or by using the keyboard shortcut of ctl-alt-s/command-opt-s. Here you can set your stage size, color, etc. Does that cover it?
