Where (in which headers) should this name appear?

If in the "Received:" headers, then the host's real name must appear; the
information is needed for diagnosing problems (including the source of spam). I
think you have control over this by setting the real hostname in sendmail.cf.

If you want it in From: headers, read what JC says.
