Lee, Like a lot of other things on a SUSE system, you would use YaST for this: Yast -> System -> Select time zone
And, while your clients may not listen to your advice, since they're theoretically paying for that from DSG, you would be remiss if you didn't at least try to tell them they are not even close to following best practices in this area. If nothing else, since VM and Linux are small potatoes to them, they might be willing to experiment in this way.
