Like a lot of other things on a SUSE system, you would use YaST for this: Yast -> System -> Select time zone
Thanks to Mark, and everyone else who replied.. Using YaST did allow us to change the timezone.
And yes, we've encouraged them to use GMT, at least for the VM LPAR....
