I've been quite happy with Levanta for creating Linux Instances. It's very good at creating Instances that have similar configurations (e.g. test and development). The product strengths are in a type of copy on write sharing of Linux and any RPMs. The product is a little weak in version tracking, but some scripting gets around that. The current version does not offer much for monitoring the Instances. I don't know if Linuxcare has any plans in that area.
