The version of Linux used is pretty independent of the version of z/VM in place. I'm not aware of any instances of a z/VM upgrade forcing an upgrade of a guest OS. (It may have happened, but I am not aware of it.) I would have to believe that if you installed z/VM 5.1, that SUSE 7.0 would still work quite well. (And I don't mean SLES7, but the original SUSE Linux/390 distribution.)
