If Oracle keeps all its changes strictly under /usr (i.e., nothing in /etc, or /var, or /opt....) then that should work. However, remounting /usr on your guests is going to mean shutting down to single-user mode, because by the time they're up and running they're all using stuff from /usr. And frankly, if you go down to single-user mode and back up, you might as well just reIPL them, IMHO.
